It’s been a while….it’s been a long while since I’ve blogged. What a whirlwind it has been since I’ve arrived back in the good ol’ U. S. of A.! Today marks five weeks and 2 days since I’ve returned! And, wow, has it gone quick. I’ve been extremely busy with online health groups and my own health & wellness. Sometimes I feel as if there aren’t enough hours in the day and I realize that is probably a good problem for me to have.
I’m totally overdue in writing this post.. I feel like I have to feature these two amazing restaurants that I had the privilege of visiting in England, because they were so amazing….and because I feel like reminiscing a bit. I’m totally missing you, England.
Duck & Waffle
Located on the 40th floor of the Heron Tower, Duck & Waffle is now a new favorite in London. The views, the food…just have a look for yourself below. (I spy tower bridge!)
We got lucky and the request for a window seat was granted–I highly recommend trying to do the same. The Duck Congee and Crispy Polenta were out of this world! You better believe I’ll be back for this view and delicious food. Oh, and the best part is…this place is open 24/7! They have breakfast, brunch, and all day menu options! Thanks for the surprise 🙂 xx
The Hind’s Head
This was my last night in England, so it was a pretty special meal. I absolutely loved the vibe of this place. At the time, they had 2-3 set menus to choose from. I chose the “Elizabeth” menu, and it was amazing. The meal started off with pea & ham soup with a yummy scotch egg (I was mostly excited for the scotch egg since I was dying to try one for the first time–so good!)
The second course was seared scallops with horseradish and fig puree. I’m a huge scallops lover, and these were probably the best I’ve had! My third course was the confit butternut squash, and fourth was the breast of pigeon. I finished with not only one but TWO desserts! It was so much food. I definitely did not leave hungry and I will most definitely return to The Hind’s Head in Bray. It was a night to remember.
Life
I learned quite a bit about myself, and LIFE itself, during my time in England. It was so refreshing to just have some time away. It’s been nice to get back into my normal routine, but I’m already looking forward to my next visit. It isn’t easy wanting to be two places at once! I’m still waiting for the whole “teleport” thing to be a REAL thing. Until then, I’ll be racking up my frequent flyer miles 🙂
Following Rome: Part 1, I wanted to write a separate blog for my tips/suggestions and also chat about a really cool food tour that we went on.
Secret Food Tours
While researching all things “Rome” before the trip (yes, I’m a total planner), I stumbled upon a blog that had mentioned doing a food tour. Even though I love cooking and eating healthy, I also enjoy being somewhat of a “foodie”. After some more research, I decided to book a tour with Secret Food Tours Rome. It was amazing–so much more than just a food tour. Our guide was full of fun information about italian cuisine and Roman history. From start to finish, the tour was about 3.5 hours and we made 8 stops–Talk about stuffed!! Here are a few snapshots from the tour:
Secret Food Tours has locations throughout Europe, South America, and the United States. I’d definitely suggest taking a look at their website. I know I’ll definitely be returning to another tour in a new city!

Listen girls, we all like to look cute in heels…but you’ll seriously break your ankles on the cobblestone streets in heels! Also, you walk a TON! You want to be comfortable.
Bring your own water bottle
Water Fountain
There are black fountains that run 24/7 throughout the city! The water is cold, clean, and super refreshing!
The Colosseum is FREE on the first Sunday of the month
There still will be a line though
Don’t visit in July or August
Don’t get me wrong the trip was amazing, but it was SO hot. If I get the opportunity to visit again, I will avoid summer months at all costs.
Don’t taxi
If you’re staying within the city, you shouldn’t have to take a taxi anywhere, and I wouldn’t. We heard from a lot of people that they really take advantage of tourists. Use Uber or arrange a private driver (we used a private driver through our Airbnb).
Eat at places outside of main attractions
Don’t eat close to the sites. The best food places are away from the main attractions!
Use a map
Don’t rely on your iPhone to direct you around the city. You’ll get lost quick! Use a city map. You’ll get the hang of it in no time!

Trastevere
As mentioned in Rome: Part 1, we spent a lot of time in Trastevere (it’s that BIG circle on the bottom left of the map below 🙂 ). It is the cutest little neighborhood. It was recommended to us by our host, and I’m so glad we made the time to visit. It’s sort of “off the beaten path”, which means less touristy and more Italian. It’s full of local Italians which is a great sign that the food is authentic. Definitely have a look if you get the chance to visit Rome!
One word for Rome: Breathtaking. What an amazing city! Rome is full of so much history and beautiful sites. I’d return in a heartbeat. This is “Part 1” of my blog posts on Rome–I’m working on another right now. There’s just too much to share in one post! So, here’s a quick “wrap up” of the long weekend. Stay tuned for Part 2! I’ll be chatting about one of my favorite tours and a few tips/suggestions that I wish I had known before visiting!
Accommodations:
After a couple weeks of research, I decided to book an Airbnb versus a hotel and I’m SO thankful that I did. Our Airbnb was absolutely perfect! The location was central and we were able to walk to everything (except the airport–30 minute drive). Our host was amazing and we had so many helpful “insider” tips upon arrival. I always feel like you get so much MORE when you use Airbnb, especially when you have a great host.
Out of all of the beautiful sites to see, this one would probably be my favorite. Total Tourist Tip: Visit the fountain at night! As you can see, there’s something more magical about it at night. The lighting at night makes it even more amazing–less crowds too!
Pantheon
The Pantheon and Trevi Fountain are pretty close to one another. Total Tourist Tip: If you visit during the day, you’re able to go inside–for free. At night, it’s just as beautiful but you’re not able to appreciate the inside. I loved visiting both, the Trevi Fountain and Pantheon, at night and during the day.
Spanish Steps (Piazza Di Spagna)
Another stunning site. From drinking from the fountain at the bottom of the steps, to making the hike to the top–cool, just cool. Total Tourist Tip: Bring your own water bottle. There are fountains throughout the city that have clean, refreshing, FREE water! I definitely feel like I’m already running out of awesome, amazing adjectives to describe all of the sites. But in all fairness, until you go and see them for yourself, it’s hard to say enough “amazing” things about them.
Colosseum (Colosseo)
I have to admit, I didn’t take the tour inside the Colosseum. However, standing outside and soaking in the view was enough for me–especially since it was about 95 degrees with 50% humidity every day. Total Tourist Tip: If you’re planning a trip to Rome, avoid July and August unless you don’t mind the heat (hot, hot hot).
St. Peter’s Square, Vatican City (Piazza San Pietro)
We had four whole days in Rome, and you’d think that would be plenty of time to see all the sites. I definitely think it is doable in four days to see the “main bits”, but there’s just so much to see! You could spend months in Rome and not see it all! The Vatican was our last stop, and I’m glad we decided to go. Again, we didn’t actually go inside any of the buildings since it was a quick stop and we weren’t properly dressed. Total Tourist Tip: You must wear “church attire”. Shoulders and knees must be covered to go inside the buildings. However, you can get close enough and have some pretty great views.
Favorite Restaurants:
Grazia & Graziella
As mentioned above, we were in Rome for four days– we visited this place THREE. Twice for lunch, and once for dinner. Yum, yum, and yum! It was super tasty, had a great atmosphere, and the staff was quite entertaining. The tasting platter (pictured below) with warm bread was to die for–I think that’s what kept us coming back for more. Oh, and the complimentary limoncello wasn’t so bad either! It is located in Trastevere, which ended up being one of our favorite little neighborhoods across the river.
Roscioli
This yummy spot was about 100 steps from our Airbnb. Great spot to pop in for a morning pastry or afternoon pizza/pasta. Sorry for the lack of pictures, I was always starving and too excited to eat (no time for pictures when you’re “hungry”).
Gelateria Del Viale
On the way home from Grazia & Graziella (located in Trastevere), stop by this gelato shop. The pistachio and coconut were our favorite flavors.

August is here! Another new month, which means new adventures and new goals–YAY! A few years ago, August was just another month. But, now, August is a special month. It has a bigger meaning. It’s a month to spread awareness for a disease near and dear to my heart–SMA.
Many of you that know me, know what SMA stands for. But, I’m sure many of you have never heard the acronym before. I’ll be honest, I had never heard of it, nor did I know the meaning, until two years ago.
My nephew, Graham, was diagnosed with SMA (Spinal Muscular Atrophy) Type I shortly after his birth. SMA is a genetic disease that is caused by a mutation in the survival motor neuron gene 1 (SMN1). In a healthy person, this gene produces a critical protein that is essential for the function of nerves that control our muscles. Without this protein, the nerves aren’t able to function properly and eventually die. This leads to debilitating and often fatal muscle weakness.
Individuals with SMA have difficulty performing daily life functions. Functions that most of us so easily take for granted (i.e. breathing, swallowing, and walking). However, it does notaffect their mental capability. The brain is not affected and most with SMA have above average intelligence. Their bodies may not be perfect, but their minds definitely are, and Graham is living proof!
Over the past two (and a bit) years, my family has been through gut wrenching heartbreak, sadness, and cried countless tears. However, we’ve also been through tears of joy, happiness, and celebrated monumental milestones with Graham! It brings me so much joy to see the progress he has made, and continues to make.
Most of this progress can be attributed to Spinraza, or as Ade says, his “muscle juice”. 🙂
Because of growing awareness and clinical research, I’m confident that SMA has met it’s match. Graham had the opportunity of participating in a clinical research trial for Spinraza (nusinersen), and it has been life changing! It has made it possible for individuals with SMA to reach milestones that otherwise would’ve been referred to as a miracle.
Graham has taught me so many things at such a young age. Who knew a two year old could impact you so much? He has taught me to never take anything for granted (especially the gift of good health), family first, and to not sweat the small stuff.
My brother and sister-in-law are amazing humans, super-humans if you will. The love and care for their family is beyond measure. They seriously go above & beyond and then some! They have set an amazing example for everyone around them. I truly aspire to be half as good of a parent that they are someday.
I thank God everyday for my sweet nephew, Graham, and the impact he has had on our lives.
Today, we CELEBRATE. Today, we spread awareness. Today and everyday we cherish the gift of life.

I have to share this recipe with you, and I’m going to do my best to try to give the correct amounts of ingredients. Long story short, I had both of these recipes picked and pinned on my Pinterest and was without wifi….So I had to do my best to make my own version. (P.S. It’s quite nice only being able to use my phone when wifi is available. I’m realizing how much I’m on my phone…TOO MUCH! You miss out on so many little things that you don’t even realize when you’re glued to your screen.)
Anyway, back to the recipe….
Buffalo Chicken Tenders & Cauliflower Mash
For The Tenders:
1 lb. of Chicken Breasts or Tenders (I would suggest chicken tenders, because they are smaller and cook easier. If you use chicken breasts, just butterfly them and cut again down the middle–vertically. They’ll cook much quicker)
1 Egg, beaten
1 Cup Almond Flour
1 Tbsp. Coconut Oil
1/4 Cup Frank’s Hot Sauce (Buffalo or Regular)
1/2 tsp. Butter
1-2 Cloves of Garlic, Minced (I’m a garlic LOVER–the more the better)
Sea Salt (I prefer Pink Himalayan), Ground Pepper
Heat coconut oil in a pan over medium heat.
While pan warms up, assemble your “breading station” by putting all tenders on one plate, mixing egg in a bowl, and putting the almond flour on a separate plate.
Coat your tenders (one at a time) with the egg, almond flour, then add to the pan. Cook a few at a time (3-4 min. each side should do it), then transfer to a large dish once cooked completely through.
While chicken cooks, add the Franks, butter, garlic, salt, and pepper to a sauce pan. Heat over low until warm, and butter is completely melted–stir frequently.
Once chicken is finished and sauce is warm, drizzle the sauce over the chicken to coat both sides. Serve & Enjoy!
For The Cauliflower Mash:
1 Head of Cauliflower, chopped–discard stems
1/4 cup Almond Milk
2 Tbsp. Chicken Broth (optional)
1 tsp. Butter
Garlic Powder, Salt, Pepper
Fresh chives, or cilantro for garnish.
Bring pot of water to a boil, add chopped cauliflower. Cook on medium heat for about 10 minutes, or until cauliflower is soft.
Strain cauliflower in colander and add to a blender. Add all other ingredients and blend until smooth. (I usually use 1/2 tsp. garlic powder and 1/4 tsp. of salt and pepper, but adjust to your flavor preference.)
Add to your plate and garnish with your favorite fresh herbs 🙂
Rome in 6 Days
Last Night’s Celebratory App…Italy in ONE week!
I’ve been searching, researching, and searching again about all things Rome. In 6 days, I’ll be headed to the airport for another adventure! I was back and forth on even taking a trip once in England, but I figured why not? Flights are ridiculously cheap once you’re in Europe, so I needed to take full advantage.
Stay tuned for updates! I’m going to be a “total tourist” and see all the sites! We were lucky enough to snag an Airbnb right in the middle of everything. Literally, everything is within walking distance! I’ve also booked a food tour and I can’t wait to share the details with you all!

Since I’ve been in England for a couple weeks now, this recipe is a weeknight staple. It MUST be on the menu. I’ve had a lot of requests for the recipe…so here it is!
Original recipes call for a lot of mayo and sour cream, so I found some “better choice” alternatives and tweaked the recipe a bit.
Salmon with Cucumber Dill Salad
Salmon
4-6 oz Salmon Fillets, skin on (my personal preference)
Olive Oil
Ground Pepper and Garlic Powder
Cucumber Dill Salad
1 English Cucumber
1/3 large red onion. chopped
1/4 tsp sea salt
1/4 Cup Greek Yogurt
2 Tbsp. Vegenaise
1-2 Tbsp. Apple Cider Vinegar
1/4 Cup Dill, Chopped
1 Clove of Garlic, minced
Ground Pepper
Before cooking the salmon, get started on the salad, because the cucumbers have to dry a bit.
Chop off ends of the cucumber and cut in half down the middle (lengthwise). Use a spoon to scoop out the middles of the cucumber, removing the seeds. Cut each half into small slices, chop the red onion, and toss both in a colander. Toss with sea salt and let them drain in the colander for about 20-30 minutes. Pat them dry about every 10 minutes, but make sure you really pat dry with a paper towel when finished. (If you skip this step, your salad will be extremely watery–yuck)
While you wait for the cucumber and red onion to dry, make the rest of the salad. Combine the yogurt, vegenaise, vinegar, dill, garlic and pepper in a bowl–mix well.
After cucumber mix has thoroughly patted dry, combine with the yogurt mix–chill until salmon is ready.
Cook your salmon to your personal preference (grill or bake). I usually preheat the oven to 375 degrees F, drizzle with olive oil and top with ground pepper, garlic powder. Bake close to 8-10 minutes.
4. Once your salmon is finished, top it with the cucumber dill salad & enjoy
Bath is a town located in the beautiful countryside of southwest England–about 98 miles from London. Known for its natural hot springs and beautiful architecture, it’s no wonder it’s a tourist’s dream. The place was a gem, and I would undoubtedly visit again. It was the perfect day trip!
Good Morning
Of course the day has to start with some fuel (we knew we were in for a bit of walking). After some quick research on breakfast spots online the night before, Boston Tea Party was the clear winner. I enjoyed the sweetcorn hash and a yummy latte–it might’ve been my favorite meal of the day….but what can I say, I’m a huge breakfast fan!
Views
After breakfast, we were off to be “total tourists” (as I often say). First stop: Bath Botanical Gardens. We probably didn’t even see a fourth of what it had to offer, solely because we were on the move, but what we did see was beautiful. It was a peaceful little walk, and the smell of the flowers: mmm, just mmm!
After the Botanical Gardens, we ventured to The Royal Crescent and The Circus (once home to Nicholas Cage). Known for their iconic Georgian architecture, the views did not disappoint. Both, The Royal Crescent and The Circus, fall into many online sites as “Britain’s Prettiest Streets” and “Most Picturesque Places”—you can see why below. It was almost as if you are taken back in time–just beautiful

Although we didn’t venture inside of Bath Abbey, the views outside were plenty. The town was full of the most amazing architecture–a bloggers dream!

Next up: The Roman Baths–one of my top reasons for initially wanting to visit. The wait in line was only about 20-30 minutes and was well worth it. To enter, you do have to pay around 17 pounds (which is close to $22). When inside, you get the option of an audioguide (free of charge), guided tour (every hour on the hour), or the option to wander around on your own–I obviously chose this option, as my patience sometimes is nonexistent, HA!
History: The Roman Baths were constructed around 70 AD as a bathing and socializing complex. It is now one of the best preserved Roman remains in the WORLD! 1.17 million liters of spring water fill the bathing site every day–reaching a temperature close to 114 degrees Fahrenheit!
Obviously, you cannot swim here because the water is clearly untreated (you aren’t even supposed to TOUCH it, but I maybe did 🙂 Confirmation: it IS warm). However, the next best thing…..The Thermae Bath Spa – -It uses the same mineral-rich water that flows from the springs each day! What. A. Treat. (Pictures below are from the website. You aren’t allowed to take any sort of camera in the spa–bummer! I was totally going to use my GoPro in the pool–total tourist, yet again).
Alright, if these pool rooftop views aren’t enough for you…we can’t be friends. But, seriously, how amazing is this?! Relaxing in a hot pool with stellar views…my perfect Saturday. With the spa package for The Royal Bath, you get access to: Open-air Rooftop Pool, Minerva Bath (sort of like an indoor lazy river), and The Wellness Suite (steam room, infrared sauna, ice chamber, and relaxation room. You also receive a robe, slippers, and towel upon check-in.
All in all, the experience at The Thermae Bath Spa was great. I’d do it again next Saturday if I had the option. My only cons: the wait time, 2 hour limit once inside, and the crowds. If you don’t schedule to receive a treatment at the spa (massage, facial, etc.), you cannot book an appointment for The Royal Bath–which means you have to wait in line. We waited around 90 minutes before entering the spa. Like I said, yes, it was worth it, but they didn’t even serve drinks or snacks while waiting in line. I’m a snack queen, but no way was I risking my spot in a 90 minute line to run and grab a snack or drink. Once we got in, it was sort of a madhouse–BUSY, busy, busy! But, yes, it definitely was worth the experience and views on the rooftop pool. If I ever return, I will book a treatment at the spa during the week to avoid wait times and busy crowds.
Where Next?
I’m in the process of planning another weekend getaway. At this point, I have about 5 weeks left in England. I can’t believe two weeks have already come and gone! I’m definitely missing my favorite humans from home, but not so much “home” (Indianapolis) itself. I’ve recently found comfort in wandering and there’s nothing more fulfilling than exploring new places.
With that being said, I’ve debated between Paris and Rome since I’ve arrived. I’m excited to announce that I’ve officially decided on Rome–YAY! Italy has been on my bucket list for years. This will be a quick, weekend trip and I’m beyond excited. I’m currently finalizing the details and can’t wait to share them with you! Any tips would be greatly appreciated if you’ve traveled to Rome before 🙂

Yesterday was a happy day….GROCERY DELIVERY day! I honestly felt like the happiest girl in England. Doesn’t take much, right? 🙂 I found it so much easier to be able to see what I was purchasing online, rather than go into the grocery store. Shockingly, their grocery stores are quite a bit different than in the States. I used Ocado’s delivery service, and it was great!
Here are a couple of easy recipes that I thought were worth sharing.
Buffalo Chicken Salad
Ingredients:
1 cup rotisserie chicken, shredded
1 Tbsp Greek Yogurt
1 Tbsp Frank’s Buffalo (or Hot) Sauce
1/4 tsp garlic powder
Spinach
Toppings: diced cherry tomatoes, chopped red onion, avocado, hemp seeds
Directions
Mix rotisserie chicken, Greek Yogurt, Frank’s, and garlic powder in a separate bowl
While oven preheats, add ground beef to pan on the stove over medium heat. Add cumin, paprika, and garlic powder–mix well. Cook until beef is browned.
Slice each bell pepper in half and remove tops, seeds, etc.
Lay peppers on foil lined baking sheet and cook for 10 minutes
Remove peppers from oven and fill with ground beef mixture. Top the peppers off with cheese and return the pan to the oven to cook for an additional 10 minutes–or until cheese is completely melted.
Well, so far, England is treating me very well. I’ve adjusted to the time change (5hrs ahead of Indianapolis), and I’m starting to settle into a routine.
Day 1 was spent completely outdoors. The weather was absolutely beautiful..and has been since i’ve arrived! (Probably just jinxed myself to a full week of rain now—oops!). We walked through one of my favorite towns (Marlow), and had brunch and the cutest little spot—The Ivy Marlow Garden. We were able to catch a table outside, and it was just perfect. Their spinach & avocado Eggs Benedict was delish, and I discovered a new love for Pimm’s.
After visiting Marlow, we ventured around a few more towns and parks and walked along the River Thames. In the evening, we drove to Windsor and had some pretty great castle views.
Today, I did a lot of relaxing and cooking. I made this egg bowl for a late breakfast, and had to share the yummy recipe.
Salmon & Spinach Egg Bowl
Ingredients
1 tsp. Coconut Oil
1/2 tsp. Minced Garlic
2 Eggs
Handful of Spinach
Wild Alaskan Sockeye Salmon
1 Tbsp. Greek Yogurt
Directions
Heat coconut oil in pan over medium heat. Add minced garlic and cook until fragrant. (About 1-2 minutes)
Mix eggs in bowl, and add to pan.
Once eggs start to thicken, toss in spinach. Cook through until eggs are done and spinach is completely wilted.
Transfer to bowl. Top with salmon, greek yogurt, and pepper.
Currently, I’m in the midst of going through quite a few life changes. And, honestly, it’s been extremely overwhelming. I’m usually one to keep things to myself and bottle them up inside until, you know, they absolutely explode. Well, here I am exploding…all over my blog. Rather than be a negative Nancy, I’m trying to look at things through a different light—looking back on my 25 years of life and being thankful for all I’ve learned (oh, and am still learning). Sometimes life tests you in some strange ways and it’s okay to admit it. It really helped taking a few minutes to reflect. So, in honor of turning 26 recently, here’s to another year of learning and memory making!
Take the trip.
Two hour drive, two hour flight. Who cares! Go somewhere. Take the adventure.
Forever friends will always be there. Friends come and go. Don’t take it personal, or do…the choice is yours.
Family love is the best love.
Your family is your backbone. Rely on them, learn from them.
Chat with your elders.
They have some pretty cool life-changing stories. And, believe it or not, they may teach you a thing or two.
Don’t you dare follow the “social norms”. Be yourself. Write your own story.
No, you don’t have to get married by 23 and have your first child by 25 and live in a perfect house with a white-picket fence. STOP THAT!
